Esclafit
This wine represents our vision of a Priorat 2.0, wines with a fresher, more balanced and elegant profile, while preserving their fruitiness and minerality, and remaining easy to drink. For our single-vineyard wines, we have developed a language inspired by the periodic table of elements, incorporating the various factors that influence the making of a wine: Climate, Vintage, Geology, Viticulture, and Winemaking. On the back of this sheet, you’ll find all the icons that define each element of the table. This project will have a second phase, in which we will further develop this language in the form of a book.
We invite you to join us on this journey!
Grape
2019 was marked by very little rain and extremely high temperatures in June, which caused many grapes to dry out, including entire vines, and production was significantly lower. The wines are round, full and pleasant, the result of this extreme restraint of the vines, which produced small and extremely concentrated grapes, with very good acidity.
Winemaking
Garnacha (with 10% stems) and Carinyena undergo spontaneous, $SO_2$-free fermentation in stainless steel, with tailored extraction and 30 days of maceration at 25°C. After malolactic fermentation, the wine ages for 15 months in used French oak barrels (Dargaud) and 6–8 months in the bottle.
Tasting
This wine represents our vision of a classic Priorat, with tamed power, which moves slowly in the glass, but with a current and modern texture, with juiciness, extraction, ripe fruit, and minerality. The wine shows a beautiful cherry color with a concentrated nose, which evokes black fruit and pepper, with a touch of cinnamon and licorice. The palate expands with a fruity mouth, dense, opulent, and with fine tannins that melt at the end.
