Gin PA /311

PA/311 is Pepe Albela’s personal project after discarding 310 different gins before finally landing on the definitive one, #311. True Galician soul (northwest of Spain), a floral profile, and a fresh Atlantic vibe that makes it stand out.

Botanicals

It features juniper, sage, bay leaf, hibiscus, lemon verbena, ginger, eucalyptus leaf, cardamom, mint, and black tea. Last but not least: dried Albariño grapes. The botanicals lean local and herbal, giving the gin a clean, aromatic personality without any gimmicks.

Making

It starts with a wheat-based spirit and pure water. Then the botanicals are distilled in a traditional pot still. After that, it rests with dehydrated Albariño grapes, adding subtle depth and a faint golden hue. Produced in small batches, with hands-on control from the distiller and a artisanal approach

Tasting

On the nose it’s floral and herbal, with a fresh lift and a soft fruity wink from the Albariño. On the palate it’s smooth, crisp, and finishes clean. Perfect with a classic tonic and a lemon peel, or dressed up with rosemary and white grapes. Great alongside seafood, ceviche, or fresh tapas.
